Overview
Mountain Oven is an organic bakery making sourdough breads and artisan pastries. We serve the North Fork, Roaring Fork, and Gunnison Valleys, and continue to build deepening relationships in these communities.

We bake with love in the beautiful agrarian mountain town of Paonia, Colorado. We stone-grind our whole-grain flours in-house and use natural leaveners for optimal nutrition and flavor. We hold integrity and accountability for and through our work and creations. Our sourcing is done with the utmost care - whenever possible, we source from the abundant local producers whom we are lucky to share this valley with. Our wheat berries are grown in Monte Vista and we source from North Fork Valley producers for heirloom barley, corn, and rye. We are working closely with local farmers as we approach the 2020 growing season to facilitate increased local grain production and utilization in our region.  We understand health holistically: our land, spirits, bodies, sustenance, and community are all inextricably linked. Wholesome food is our expression of this sacred connection. We are full heartedly committed to our role in our local food system and would love to connect with members who share similar values and goals.
Products & Services
We source as locally as possible. Our primary growers are located in the North Fork Valley. We also source from the San Luis Valley, eastern Colorado, and western Utah. 

We love diversity in our milling and baking, and use whatever we can get! Our primary grains are hard red wheats (spring and winter) for bread flour. We also have a solid supply of White Sonora wheat, Rouge de Bordeaux wheat, rye, and spelt. We work with some very small scale growers and have limited quantities of barley (Burbank), hulless oats, and multiple heritage corn varietals.

We are currently looking for growers / sourcing for increased supply of:
  • Khorasan / Kamut
  • Durum
  • Hulless Oats
  • Rye
  • Field Corn (multiple varieties of interest)
