Good afternoon! We have two new products we’re “soft launching” this week, both of which you may have tasted at a recent Saturday pick-up. They also both contain local honey from a small farm in Lakewood: Flower Street Farm. We’ll talk more about our local partnerships in a future email.
Honey Oat Sourdough Sandwich Loaf
We’re thinking of this softer, sliced bread as a gateway between our breads and store-bought breads. It’s actually a pan-shaped version of our existing Honey Oat Sourdough Bread. We’d like to be an approachable bakery, and there’s an underserved group of folks who’d like to buy “real bread” but need a sandwich loaf for lunches, picky eaters, etc.
This is indeed “real bread”. It’s our most whole-grain loaf, coming in at just over 50% freshly milled, whole-grain flour. It’s made from a combination of heirloom red wheat (Turkey Red) and oat groats. That oat flour is what gives it a softer texture without sacrificing flavor or nutrition. (For those who are sugar conscious, it’s 40g of honey in the entire 1200g loaf.)
As this loaf is a little larger than our usual loaves, we’re pricing accordingly. If this is a little too large for you but you still want to try it, we’d recommend freezing half of this sliced loaf or storing it in the fridge instead of on the countertop.
At the risk of sounding gimmicky, we’ve only ordered a limited quantity of loaf pans to try this out, so we have a limited quantity of this for sale. If all goes well, we’ll order more pans for the next time we sell this.
Sourdough Granola
If you are like us, most of the granola available is too sweet because sugars help create granola clusters. We’ve been trialing a sourdough granola where the sourdough serves a dual purpose: creating clusters and reducing the sugar content.
This week’s granola is our “base recipe”, and we’ll see how well it goes over as an 8 oz bag. If it’s popular, we’ll begin to release some variations of it (Cherry Pistachio, Cranberry Pecan, etc). As with our sandwich loaf, we’ll be offering a limited quantity of the granola this week for preorder to allow us to safely scale up.
