The Brazilian cheese bread is 'meant to be eaten fresh out of the oven,' made from fresh tapioca flour that's gluten free. When the pandemic ended plans for her food truck, Graf pivoted to selling pre-made frozen dough—just as it's found in Brazil—ready to be baked at home, recreating the warm café culture she remembers from childhood.
